Spencer's Method for Fish Fillets

Servings 3 or more depending on fish

Ingredients
2-3 lbs fish fillets, fresh or frozen
1 tbsp. salt
1 cup milk
1 1/2 to 2 cups fine bread crumbs, or Corn Flake crumbs
Salad oil or melted fat

Instructions
Cut fillets into serving portions.  Soak in salted milk for 3 minutes.  Roll pieces of fish in bread crumbs. Place in a pan and sprinkle with cooking oil or fat, a few drops of oil on each piece.
Bake in a hot oven, 500 F for about 10 minutes for fresh or 20 minutes for frozen.
Fish will be cooked when it flakes easily when tested with a fork.
