Stuffed Zucchini

Ingredients
Cabbage Rolls filling:
1 cup long grain rice, cooked
1 lb. ground beef (or ground pork or 1/2 beef and 1/2 pork)
1 onion, chopped
1 tsp. salt
1/2 tsp. pepper
Garlic, optional

1 large zucchini
1 can Tomato sauce or can tomatoes

Instructions
Cabbage Rolls filling: Mix cooked rice, ground meat, onion, salt, pepper and garlic in a bowl.

Cut zucchini in half and hollow, remove only the stringy stuff. You will have two canoe-shaped halves. Place the halves side by side in a large casserole or roasting pan.
Fill with cabbage rolls filling and pour tomato sauce or canned tomatoes on top.
Cover and bake at 350 F for 1 1/2 or until done.

Hints:
You can also use your favorite green pepper filling.
Zucchini is a very mild vegetable and you can experiment with the filing.
This is a great recipe to use when you have a large zucchini.
You may use 2 medium size zucchini instead.

Stuffed peppers: use peppers instead of zucchini, cover lightly with foil while baking.
Pre-cook rice or use instant rice. Bake for 2.50 hrs at 350F. Top with Feta cheese.
