Tea Biscuits

Makes: 15-18 biscuits

Ingredients
2 cups flour
4 tsp. baking powder
1 tsp. salt
¼ cup shortening
1 cup milk

Instructions
Mix flour, baking powder and salt. Cut in shortening with 2 knives or a pastry blender, until mixture is the consistency of coarse oatmeal. Make a well in the center of these ingredients; add liquid slowly. When all the liquid has been added, stir dough rather vigorously until it comes freely from the sides of the bowl. Turn dough onto lightly floured board and knead lightly for a few minutes. Roll or pat out to desired thickness, about ½ inch. Cut dough with 2 inch floured biscuit cutter; place onto an ungreased baking sheet. Bake in a hot oven but not on the bottom rack of the oven. Bake 450 F for 12-15 minutes.

You may also cut the dough in 2" squares instead of using the cookie cutter.

Variations:
Buttermilk Biscuits: Decrease baking powder to 2 tsp.; add ½-tsp. baking soda. Substitute 1 cup buttermilk or sour milk for the milk in the recipe.

Cheese Biscuits: Decrease shortening to 3 tbsp. and salt to ¾ tsp. Cut in ½ cup grated cheddar cheese with shortening. For an even quicker cheese flavor, place small 1 squares of sliced cheese on top of the biscuits before baking. The cheese will brown in the oven and the biscuits look nice.
