Ingredients1 medium yellow onion, sliced
2 medium tomatoes, sliced
3/4 lb. salmon fillets
1 tbsp. Thai green curry base, dissolved in 1/4 cup water1 cup loosely packed fresh basil leaves
Rice, cooked
Instructions
Preheat oven to 400 F. Make double thickness of foil and lay over baking sheet. Layer onions and tomatoes in center of foil. Place salmon fillets on top. Pour curry base over fish. Top with basil leaves. Seal up foil. Bake on the baking sheet for 30 minutes. Serve over rice.
