Serves one or more
1 large tomato per person; cut in thick 1/2 slices.
One sweet onion, cut in thin slices, or small French onion cut in thin slices, optional .
Balsamic Dressing, see recipe below
Instructions
Pour sauce over tomatoes and onion slices; serve immediately.
Balsamic Dressing:
Makes 2 cups
¼ cup Dijon mustard
1 cup olive oil, extra virgin
Salt and ground pepper
Tarragon, as desired
1/2 cup balsamic vinegar or less according to taste
Place the Dijon in a small bowl, add the olive oil a bit at a time while stirring to make a creamy texture. Mix well and beat for a minute. Add salt, pepper and tarragon; mix well. Add balsamic vinegar as desired.
Variation: Omit the onion or add finely chopped onion to the dressing instead.
