Serves 6 or more
Chicken Breading:
1 cup dried bread crumbs
1/8 tsp. ground black pepper
1 cup flour
½ tsp. dried thyme
1 tbsp. oregano seasoning
½ tsp. dried basil
½ tsp. garlic powder
18 chicken legs, soak in ice water
1 cup plain non fat yogurt
Instructions
Preheat oven to 400 F (200 C). Soak chicken in ice water. Spray a baking sheet with vegetable oil.
Combine all Chicken breading ingredients in a large sealable bag. Toss well to mix.
Dip 2 pieces of chicken at one time in the yogurt, then place them in the bag and shake until well coated. Place on the baking sheet.
When all the pieces are breaded, spray lightly with vegetable oil. Place on the bottom shelf of the oven and bake for 1 hour. Turn the pieces every 20 minutes to allow even browning.
Serve hot or cold.
