Makes 8 waffles
Requires waffle maker
Ingredients
2 cups all purpose flour
1 - 2 tablespoon granulated sugar
1 tablespoon baking powder
1/2 tsp baking soda
1/2 tsp salt
1 3/4 cups reduced fat milk
4 - 6 tablespoons vegetable oil
2 large eggs
Instructions
Place ingredients in a large mixing bowl and combined until well blended and smooth. Let batter rest 5 minutes before before using. Preheat waffle iron on setting #3 - 5, depending how crunchy you want your waffles.
When preheated green indicator light will illuminate. Pour 1/3 cup batter onto the centre of the lower grid; spread batter using a heat proof spatula to within 1/2 inch of the edge of the grid. Close lid of waffle iron, green indicator light will turn off. When green indicator light turns on again waffle is ready. Open lid and carefully remove baked waffle. Repeat with remaining batter. For best results serve immediately.
Toppings
Maple syrup, warm fruit compote or fresh berries, chopped nuts and yogurt.
Hints
Cook extra waffles a bit softer, cool, stack with parchment paper to keep separated, place in freezer bag and freeze. To serve, make fruit compote and toast frozen waffles.
Fruit compote Recipe
Place 1 - 3 cups fresh or frozen fruit, such as blueberries and strawberries, in a small pot. Sprinkle 1 - 3 tablespoons white sugar over top and cook on medium heat until soft. Mash fruit, optional. Serve warm over waffles.
