Makes one cup
Ingredients
2 tablespoons butter
2 tablespoons flour
1 cup milk
1/4 tsp. salt
1/8-tsp. pepper, fresh ground
Instructions
Melt butter in a small saucepan. Slowly stir in flour, cook and stir over medium heat, 3 minutes after the mixture bubbles. Gradually stir in milk. Add seasonings. Cook and stir constantly, until mixture is smooth and thick and comes to a boil. Serve with vegetables, peas, asparagus, broccoli, and cauliflower. You can cook in the microwave; stir every 2 minutes.
Variations:
Use less butter and flour to make sauce thinner, or more butter and flour to make a thicker sauce.
Cheese Sauce: Add 2 to 4 tbsp. grated cheese to hot sauce.
Egg Sauce: Add 2 hard-cooked eggs, chopped in coarse pieces to cooked sauce.
Parsley Sauce: Add 1 tbsp. parsley.
