Caramel Popcorn

Ingredients
2 tablespoons oil
1 cup popping corn
2 cups brown sugar
1 cup butter
1/2 cup corn syrup
1 tsp. salt or less
1 cup peanuts
1/2 tsp. soda
1 tsp. vanilla

Instructions
Add oil to a 8 quart saucepan, and heat over high heat. When oil is hot, add popping corn. Keep pan moving constantly. When corn stops popping, remove from heat. Set aside.
Bring to a boil brown sugar, butter, corn syrup, salt and peanuts while stirring, turn to low. Boil 5 minutes without stirring. Remove from heat add soda and vanilla and stir.
Pour the mixture over the popped corn and put in a 250 F oven for one hour stirring every 15 minutes.
