Serves 6 to 8
Ingredients
Batter:
4 1/4 to 4 1/2 cups milk approximately, 1 litre
¾ cup sugar
1 tsp. salt
6 eggs
3 cups flour
Butter for griddle
Toppings: white sugar, jam, maple syrup or blueberry sauce
Instructions
Add batter ingredients to large bowl and beat until well mixed, about 8 to 10 minutes. Preheat griddle and grease with butter. Pour enough batter on the griddle to make 6" to 8" wide flapjack and cook for 1 to 2 minutes on each side or until golden brown.
Serve with a sprinkle of white sugar, jam, maple syrup or blueberry sauce. See Blueberry Sauce recipe.
Batter variation: Add blueberries and a bit of extra flour to make the batter thick.
Hint: If the first flapjack is light in color, the griddle needs to warm up more.
