Grape-Nut Pudding

Serves 2-4

Ingredients
1 tsp. grated lemon rind
4 tablespoons butter
½ cup sugar
2 egg yolks, well beaten
3 tablespoons lemon juice
2 tablespoons cornstarch
4 tablespoons Grape-nuts cereal
1 cup milk
2 egg whites, stiffly beaten

Instructions
Add lemon rind to the butter and cream well.  Gradually add the sugar.  Add the egg yolks and beat thoroughly.  Then add the lemon juice.
Mix in the cornstarch, Grape-nuts and the milk.  Fold in the beaten egg whites and turn into a greased baking dish. Place the dish in a pan of hot water and bake in a slow oven at 325 F for 1 hour and 15 min.

Note:  The pudding dish is placed in a pan of hot water to help with the baking of the pudding.
