Lemon Cream MMMuffins

Makes 12 muffins

Ingredients
1 1/4 cup flour
1 1/2 tsp. baking powder
1/2 tsp. salt
2/3 cup sugar
1-4 oz pkg. cream cheese, cut in 1/4-inch cubes
1 egg
1/3 cup vegetable or corn oil
1/2 cup milk
1 tbsp. lemon juice
1 tbsp. grated lemon peel

Topping, optional:
2 tablespoons lemon juice
2 tablespoons sugar

Instructions
Preheat oven to 375 F.  Sift flour, baking powder and salt together in a medium bowl. Add sugar; stir. Add cream cheese cubes, coat well in flour mixture.
In a separate large bowl, combine the remaining ingredients. Add dry mixture to the moist ingredients. Stir until just combined. Spoon batter into 12 greased muffin tins. Bake 375 F for 20 to 25 minutes.
Topping: Mix lemon juice and water. Brush onto hot muffins when they come out of the oven.





When you tuck your children in at night, sing them a song.
Start singing when they are very young.
Too young to know you do not have a great singing voice.
