Family favorite.
Ingredients
Base:
1 cup flour
1/4 cup sifted powdered sugar
1/2 cup butter
Topping:
2 eggs
3 tablespoon lemon juice
3/4 cup white sugar
2 tablespoon flour
1/4 tsp. baking powder
Decoration: powdered sugar, optional
Instructions
Base: Stir flour and sugar, cut in butter. Knead if necessary. Pat in an ungreased 8 X 8 inch baking pan. Bake at 350 F for 10-12 minutes.
Topping: In a small mixing bowl beat eggs; add sugar, lemon juice; beat until thick and smooth, 8-10 minutes. Stir together 2-tbsp. flour and baking powder. Add to egg mixture. Blend until moistened. Pour over the base. Bake at 350 F for 20 minutes. Sprinkle or sift powdered sugar on top of the bars.
Variation: Add coconut to the topping.

Very sweet dessert, added 1/2 cup of unsweetened coconut in crust and 1/2 cup of unsweetened coconut on top before cooking.
