Makes approximately 4 dozens
1 tsp. baking soda
2/3 cup hot water
1 cup shortening
2 cups brown sugar
1 tsp. cinnamon
½ tsp. ginger
Instructions
Mix baking soda in the hot water and put aside.
In a large bowl, mix shortening until creamy. Add brown sugar, molasses and eggs. Sift flour with salt and spices. Add and stir flour mixture alternately with hot water and soda mix to molasses mixture.
Drop by spoonful on a greased cookie sheet.
Cook at 325 F until done. Cook 8 to 10 minutes, until tops start cracking.
Note: Quantity and cooking time will depend on the size of the cookies.
These cookies have a very good flavor and stay soft when stored in a cookie jar.
