Ingredients
Batter:
1 1/3 cups flour
3 tsp. baking powder
1/2 tsp. salt
3 tablespoons sugar
1 egg
1 1/4 cups milk
3 tablespoons melted butter or vegetable oil
1/4 tsp. vanilla

Toppings: Syrup, honey, jam or jelly
Side suggestions: bacon and sausages

Instructions
Stir flour, baking powder, salt and sugar together in a large bowl. In a small bowl beat egg thoroughly; add milk. Make a well in center of dry ingredients; slowly add the egg-milk mixture. Add melted butter and vanilla. Stir quickly until ingredients are just mixed and batter is still lumpy in appearance. Drop by 1/4 cupfuls on hot pancake griddle. Cook pancakes until they are filled with bubbles and the under-surface is golden brown. Turn and brown the other side. Serve as hot as possible with syrup, honey, jam or jelly. Serve with bacon or sausages.

Hint: Do not turn the pancakes more than once during cooking.

Variations:
Buttermilk pancakes or Sour milk pancakes: Make pancake batter, using buttermilk or sour milk. Reduce the baking powder to 1 1/2 tsp. and add 1-tsp. baking soda dissolved in 1-tsp. warm water.
Blueberry Pancakes: Make pancake batter, increasing sugar to 1/3 cup. Reduce milk to 1 cup. Add one cup of floured blueberries. Cook slower than plain pancakes. Serve with syrup.
