Peanutty Oatmeal Cookies

Makes 5 dozen
Peanutty Oatmeal Cookies

Ingredients
1 cup Skippy peanut butter
1 tsp. vanilla
1 cup margarine, softened
2 cups rolled oats
1 cup sugar
1 ¼ cup all-purpose flour
1 cup brown sugar, lightly packed
1 tsp. baking soda
2 eggs

Instructions
Cream together peanut butter, margarine, sugar, brown sugar, eggs and vanilla until light and fluffy. Combine oats, flour and baking soda; stir into peanut butter mixture. Drop by spoonfuls onto ungreased baking sheets. Bake at 350 F for 10-12 minutes, or until lightly browned. Cool on rack.
I made Ice cream sandwich with these. 2 cookies, 2 tbsp of vanilla icecream, sprinkle of cinnamon. Drizzle with 1/4 tsp of peanut butter softened. Serve. So good.
