Prize Coffee Cake

Makes on 8" square cake.

Ingredients
Topping:
1 tsp. cinnamon
¼ cup brown sugar
1 cup chopped nuts optional
¼ cup white sugar

Cake:
2/3 cup sugar
2 tsp. baking powder
2 tablespoons shortening
1 ¼ cups flour
1 egg beaten
2/3 cup milk
½ tsp. salt
1 tsp. vanilla

Instructions
Topping: Combine all ingredients for topping, set aside.
Grease and flour an 8 square pan.
Cake: Blend sugar and shortening together. Stir in beaten egg. Mix salt, baking powder and flour together. Add vanilla to milk and add to batter alternately with dry ingredients.
Spread a little of batter into prepared pan, sprinkle half of topping on top. Cover with remaining batter and sprinkle with remaining topping.
Bake at 350 F for 25 to 30 minutes. Allow cake to sit at room temperature in pan on cooling rack for 10 to 15 minutes before serving. Cut pieces from pan.

Variation:
White cake mix can be used instead of the cake recipe above. Make the topping listed above; you may want to double the topping recipe. Cook in a large rectangular baking pan. Bake as stated on the cake mix box, usually for 40 to 50 minutes.
