Spice Layer Cake

Serves 9-12

Spice Layer Cake without the topping


Ingredients
Cake:
¾ cup shortening
2 ¼ cups sifted cake flour
1 cup granulated sugar
1 tsp. baking powder
1 tsp. salt
¾ tsp. soda
¾ to 1 tsp. cinnamon
¾ to 1 tsp. cloves
¾ cup brown sugar
1 cup buttermilk
3 eggs

Brown sugar frosting:
2 unbeaten egg whites
¾ cup white sugar (granulated)
¾ cup brown sugar
1½ tsp. light corn syrup or 1/4 tsp. cream of tartar
1/3 cup cold water
Dash salt
1 tsp. vanilla

Instructions
Cake: Stir shortening to soften. Sift in flour, granulated sugar, baking powder, salt, soda, and spices. Add brown sugar and buttermilk. Mix till all flour is dampened; beat vigorously 2 minutes. Add eggs; beat 2 minutes more. Bake in 2 paper lined 9 X 1 1/2 inch round pans at 350F for 30 to 35 minutes.

Brown Sugar Frosting:
Place all ingredients except vanilla in top of double boiler, not directly over heat. Beat one minute with beater to blend. Place over boiling water and cook, beating constantly till frosting forms stiff peaks, about 7 minutes, do not overcook. Remove from heat  and boiling water. Pour into mixing bowl if you wish. Add vanilla; beat till frosting is of spreading consistency, about 2 minutes. Cool.

Variation: To make a white frosting, use 1 1/2 cups of white sugar instead of the white and the brown sugar in frosting recipe.
