Makes 16 cups approximately
1 large avocado, diced
1/2 lime or lime juice
8 cups torn romaine lettuce, approximately one head of lettuce
1 medium red, orange, yellow or green pepper, diced
2 green onions or 1/4 cup red, sweet or mild onion, diced
12 cherry tomatoes, cut in half
Chili Dressing:
1/4 cup of cooking oil or olive oil
2 tablespoons apple cider vinegar
1 clove of garlic minced or 1/4 tsp garlic powder
2 or more dashes of hot pepper sauce
1 tsp. fresh oregano leaves, chopped or 1/4 tsp. dried oregano
1/4 tsp. ground cinnamon
1/4 tsp. salt
Topping:
1 cup broken tortilla chips
Instructions
Mix avocado and lime juice, set aside.
Mix lettuce, red pepper, onion and tomatoes in large bowl, add avocado. Toss.
Chili dressing:
Combine dressing ingredients in jar with tight-fitting lid. Shake well.
Drizzle chili dressing over lettuce mixture and toss gently. Add tortilla chips. Serve immediately.
