Makes 4 to 7 waffles
1 1/2 cups sifted all-purpose flour
1 3/4 cups sifted pastry flour
3 tablespoons baking powder
1/2 tsp. salt
2 tablespoons sugar
2 large or 3 medium eggs, separated
1 3/4 cups milk
1/3 cup butter, melted
Syrup
Instructions
Sift dry ingredients. Beat egg yolks, add milk and butter. Combine liquid and dry ingredients, fold in stiffly beaten egg whites. Heat waffle iron. Pour 1/2 to 1 cup of mixture in each section, near center, or according to manufacturers instructions. Bake without opening until any steam escapes and the batter ceases to sing. Makes four to five 7 waffles. Serve with syrup.
Hint: For a treat, serve the waffle with strawberry preserves and vanilla ice cream.
