Makes 24 tarts
A family favorite.
24 uncooked tart shells
1 onion, finely chopped
2 cups broccoli, chopped small
2 eggs
1 cup milk
½ cup Bisquick mix
Salt and pepper to taste
Topping:
1 cup shredded cheddar cheese
Parmesan Cheese, optional
Paprika, optional
Instructions
Preheat oven at 400 F.
On a large cookie sheet arrange the 24 uncooked tart shells.
Add finely chopped onion to bottom of tarts. Top with broccoli pieces.
In a bowl lightly beat eggs and milk. Then stir in Bisquick mix and salt and pepper to taste. Stir mixture until mixed. Stir, do not beat the Bisquick mixture. Add mixture to the tarts until tart is about 2/3 full, do not overfill the tarts.
Topping: Add 3/4 tablespoon of shredded cheddar cheese on top of each tart.
Sprinkle tarts with a bit of Parmesan cheese. Top with a sprinkle of paprika for color.
Bake at 400F for 20-25 minutes until done. I like to cook 15 min and then turn them around front to back to keep the tarts cooking evenly. You may have to cook a bit longer depending on your oven.
Serve hot. If unable to serve hot, they can be eaten cold.
Freezes Well: The quiche tarts can be fully cooked and then frozen.
Recipe Variations:
Broccoli casserole
Broccoli Quiche Tarts with no pastry.
Ingredients
Omit the tart shells or pie dough that is normally used in Quiche and use the same ingredients as the tart recipe above but use more broccoli.
Instructions
Preheat oven to 350F.
In a 9X 13 glass pan, place the chopped onion.
Chop 1 small broccoli and place broccoli pieces on top of onion pieces.
In a bowl lightly beat eggs and milk. Then add Bisquick mix, and salt and pepper to taste. Stir mixture until mixed. Stir, do not beat the Bisquick mixture. Add mixture to the ingredients in the 9X13 pan.
Topping: Add shredded cheddar cheese and Parmesan and sprinkle with paprika.
Bake at 350 for about 50-60 minutes or until done.
This recipe is the same as the tart recipe but you cut up a whole small broccoli. Since it uses no dough, it makes a nice light lunch or supper.
I have never frozen this recipe.
Hints:
You could add a bit of chopped red pepper.
In the Spring add chopped fresh chives for flavour.
