Ingredients
3/4 cup white flour
1/4 tsp salt
1 tsp baking powder
1 tablespoon white sugar
1 egg
2/3 cup milk
1/3 cup water
1/2 tsp vanilla or graded lemon rind
Instructions
Mix flour, salt, baking powder and sugar in a bowl. Make a well in centre of bowl. In separate bowl, beat egg and stir in milk, water and vanilla or lemon rind. Pour liquid ingredients in centre of dry ingredients and combine with a few swift strokes. Ignore the lumps in the batter. Let batter sit for 5 minutes, or refrigerate up to 4 hours.
Heat small or medium frying pan to medium heat. Grease with oil. Add 1/4 cup to 1/3 cup batter in middle of frying pan. Tip pan and let batter spread over the bottom. Cook until the crepe is brown underneath. Flip over with spatula and brown the other side.
Serve with brown sugar and lemon juice or maple syrup or stewed fruit.
Hint:
To test if pan is hot enough, add a 1/4 tsp of batter to hot pan, if pan is hot, batter will brown.
