Salmon Croquettes in cast iron frying pan |
Ingredients
2 cups flaked cooked salmon or 2 cans salmon, 213g each
2 cups mashed potatoes
¼ tsp salt, optional
1/8 tsp pepper
1-2 eggs, beaten
1 tablespoon fresh parley, minced or 1 tsp dried parsley
1-2 tsp lemon juice or Worcestershire sauce
½ cup bread or cracker crumbs
2-4 tablespoons cooking oil
Instructions
Mix salmon, potatoes, salt, pepper, eggs and parsley in a
bowl. To make mix moist stir in just enough lemon juice or Worcestershire sauce
to the ingredients for a moist mixture. Divide mix in 9-12 portions and make
patties. Bread patties in bread crumbs.
Preheat oil in frying pan over medium heat. Add
croquettes and cook until patties are medium to dark brown. If oily, drain on
absorbent paper before serving.
Hints:
Serve with one cup mushroom sauce, brown sauce, white sauce or sour cream sauce.

3 slices of bread makes 1 cup of fresh bread crumbsUse ice cream scoop to measure patties.
