Chicken or Turkey Bouillon

Makes 6-8 cups

A mild flavored bouillon to use in soups and recipes calling for broth.

Turkey Bouillon just starting to boil

Ingredients
1 cooked chicken or turkey carcass
6-8 cups of water
3 celery sticks with leaves, cut in 3” sections
2 carrots, cut in 3” sections
1 large onion, quartered
1 bay leave
½ tsp thyme
¼ tsp black pepper
¼ tsp dried parsley


Instructions
Place carcass in large pot, break carcass to fit in pot. Cover with water.  Add remaining ingredients. Bring slowly to a boil. Simmer partly covered for 1 ½ hours.  Remove scum after ½ hour.  Strain, cool uncovered.  Refrigerate in covered container in bowl.  Remove grease from the top before using. Use in soups. Freezes well.
