Maple Chocolate Avocado Mousse

Serves 1 to 2

Maple Chocolate Avocado Mousse

Ingredients

1 avocado, ripe, peeled and seeded
2 tablespoons cocoa powder
1 ½ to 2 tablespoons maple syrup or  honey
1/8 tsp vanilla

Garnish:
Fresh or frozen raspberries, thawed

Directions
In a food processor, combine avocado, cocoa, maple syrup and vanilla. Blend ingredients until smooth. Garnish with raspberries before serving.

Hints:
If using slightly under ripe avocado, refrigerate mousse for 30 minutes before serving.
Taste and adjust sugar as required.
Maple syrup, cocao and avocado makes a great mousse.
