Danish Pancakes

Makes 14 pancakes

Great for snacks or breakfast.
Requires a cast iron Aebleskiver pan or similar pan and a wooden skewer

Ingredients
1 cup all purpose flour
1 1/2 tsp sugar
1/2 tsp baking powder
1/4 tsp salt
1/4 teaspoon ground cinnamon, optional
1 dash ground nutmeg, optional
1 dash ground cloves, optional
2 tablespoon butter
2 large eggs
3/4 cup milk
1/2 tsp vanilla

Apple Filling or Chopped cooked apples
Powdered sugar or maple syrup

Instructions
In a large bowl mix flour, sugar, baking powder, salt, cinnamon, nutmeg and cloves.
In a separate small bowl melt butter, cool slightly. Stir in eggs, milk and vanilla.  Add mixture to flour mixture. Lightly stir with wooden spoon until well blended and still a bit lumpy.

Preheat pan in oven and transfer to top of stove or preheat pan over medium heat. Grease pan with oil or butter.
Pour batter to about 1/4 full, add baked apples or other filling and add more batter to about 2/3 full.
Cook one side. Flip over 1/4 turn using a long wooden skewer or Aebleskiver tool. Cook and flip over again 1/4 turn, until fully cooked and golden brown about 2 minutes.
Sprinkle with icing sugar or dip in maple syrup.

Notes:
The cast iron Aeblleskiver pan can be 15" wide and weight over 5 lbs.
