Ingredients
3 lbs or 1.5 kg boneless, skinless chicken thighs or breasts, trimmed of fat
1 cup onions, chopped
4 to 8 carrots chopped
1 green pepper, chopped
1 red pepper, chopped
1 or 2 hot peppers, chopped
3 cloves garlic, minced
1 cup chicken broth, reduced sodium or no salt variety
1 large can, 796 ml diced tomatoes, no salt added variety
1 ¾ tsp. Cajun or Creole seasoning
Dash of cayenne pepper
3 cups cooked brown rice or Cauliflower Rice sautéed with garlic and pepper, optional.
Topping:
3 green onions, chopped, optional
Instructions
Place all of ingredients except optional rice and topping in the slow cooker.
Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours.
When chicken is tender, after approximately two thirds of the cooking time. Remove chicken from pot, shred and add it back to the slow cooker.
Serve over optional cooked rice. Top with chopped green onions.
