Bannock Cooked in Frying Pan

Serves: 8 Agnes Bannock Cooked in Frying Pan Ingredients : 3 cups white flour 1 tsp salt 2 tablespoon baking powder 1/4 cup oil, melted butter or margarine. Light olive oil is a good choice. 1 1/2 cup milk or water Instructions : Measure flour, salt and baking powder into large bowl. Stir to mix. Pour oil or melted butter and milk or water over flour mixture. Stir with fork to make a ball. Turn out onto working surface. Knead gently about 10 times. Pat into a flat circle 3/4 to 1 inch thick. Preheat oven to 350F. Place dough in a slightly preheated cast iron frying pan, heated in oven for about 5 minutes. Cook dough for 25-30 minutes in a 350F , turning dough halfway using two lifters for easier turning. Cool 5 minutes and remove from pan. Serve hot with honey. Break off chunks or slice with knife. Swedish Tea Ring in Bread Machine

16 Servings Makes 2 tea rings Agnes Swedish Tea Ring Ingredients 1 1/4 cups milk 1 egg, beaten 2 tablespoons margarine or butter 1/4 cup white sugar 3/4 tsp salt 3 2/3 cups white flour 1 1/4 tsp yeast Filling : 2 tablespoons margarine or butter 2 tsp cinnamon 1/2 cup brown sugar 2/3 cups raisins or mixed dried fruit Topping 16 cherries 16 walnuts halves Instructions Measure ingredients in order listed into baking pan, or according to your bread machine. Insert baking pan into oven chamber, twist to secure. Close lid. Select dough/pasta setting. Press start When cycle is complete, remove dough from machine. Divide dough in half. Roll each half into a rectangle 14x 9 inches. Spread each half with the butter and sprinkle with half brown sugar, cinnamon and raisins. Roll up, beginning at wide side. Pancake Mix

Serves 2 Gil Ingredients 1 cup flour 1 tsp. baking powder 1 cup milk 1 tablespoon oil 1 egg 1 cup frozen or fresh fruit, optional. I like to use 1 cup of frozen blueberries. Maple syrup or fruit sauce Instructions Mix together flour, baking powder, milk, oil and egg and let sit 5 minutes. Add fruits if desired. Heat griddle at medium-high heat. Add vegetable oil. Drop batter by teaspoonful onto the griddle. Turn pancake when bubbles break through the surface. The bottom should be golden brown. Cook the other side. Serve with maple syrup or fruit sauce. Spencer's Method for Fish Fillets

Servings 3 or more depending on fish Marilyne Pickerel fillets cooked from fresh fish Ingredients 2-3 lbs fish fillets, fresh or frozen 1 tbsp. salt 1 cup milk 1 1/2 to 2 cups fine bread crumbs, or Corn Flake crumbs Salad oil or melted fat Instructions Cut fillets into serving portions. Soak in salted milk for 3 minutes. Roll pieces of fish in bread crumbs. Place in a pan and sprinkle with cooking oil or fat, a few drops of oil on each piece. Bake in a hot oven, 500 F for about 10 minutes for fresh or 20 minutes for frozen. Fish will be cooked when it flakes easily when tested with a fork. Flattened Chicken with Vegetables

Serves 4 Makes a great one dish meal. Suzanne Flattened Chicken with Vegetables Ingredients One whole chicken, flattened 5 potatoes, chopped or 12 small potatoes 4 carrots, chopped 10 mushroom, sliced 2 red or green peppers, chopped 1 sweet potato cube vegetable 1/4-1/2 cup vegetable oil 1/2 cup of white wine Marinade sauce 3 tablespoons piri piri sauce 1 tablespoon rice vinegar 1 tablespoon soya sauce, reduce salt 2 tablespoons wine vinegar 1 tablespoon grapeseed oil or avocado oil Instructions Mix marinade sauce ingredients. Place flattened chicken and marinade in a bag or glass dish. Marinade for 24 hours or less. Preheat oven to 425 F. Place vegetables on bottom of large baking dish. Place chicken, breast side up on top of vegetables and pour oil over chicken. Add white wine to bottom of dish. Loosely cover dish with foil. Bake in preheated oven for an hour, remove foil and bake 20 minutes until chicken is cooked and golden. Hint : To Flatten Ch...
