Chicken Noodle Soup

Serves 4 to 6
Great recipe for someone not feeling well. Add spices as needed.

Chicken Noodle Soup

Ingredients
1 tablespoon oil
1/4 cup onion, diced
2 tablespoons green pepper, diced
1 to 2 carrots, diced
1 cup cooked chicken breast, diced
4 cups chicken broth or substitute for 2 bouillon cubes and 4 cups water
3 cups water
Spices, optional
1 cup of small egg noodles

Instructions
In large pot preheat oil. Add onions, green pepper and carrots. Cook until vegetables are soft and onions are transparent. Add cooked chicken, cook an extra minute. Add broth, water and spices. Bring to boil, add bouillon cubes, if using. Add egg noodles and stir. Bring soup to a boil and simmer for 20 minutes to an hour. Serve with crackers.

Spice recommendations:
Salt and pepper to taste
Parsley, thyme, green onion tops
Minced garlic
