Chicken Pasta Dish |
Ingredients
1/2 package, or 180g spaghetti, rigatoni or other pasta
1 tablespoon oil
1/2 onion, chopped
2 cloves garlic, minced
2 cooked chicken breast, diced
1/4 cup spicy red pepper tomato sauce
2 cups baby spinach
1/2 cup shredded mozzarella or Monterey Jack cheese
Instructions
In preheated frying pan heat oil, add onion and garlic, cook 2 minutes. Add cooked chicken and continue cooking until onions are soft. Stir in spicy red pepper sauce, bring to boil, simmer 10 minutes.
Meanwhile cook pasta in separate pot according to package directions.
Add spinach to sauce and simmer until spinach is just wilted.
Just before serving, stir cheese into sauce.
Serve over pasta.

Variation: Try with Gilberte's ingredients. 1 onions, 2 garlic cloves, 2 uncooked diced chicken breasts, 1 yellow pepper, 2 cups frozen spinach, 1/2 cup of salsa, 1/2 cup of water and 1 cup of sour cream. Add 5 provolone cheese slices at the end. Follow directions and cook longer until chicken is cooked.
