Nice Fall salad and pretty to serve.
Serves 2
Baby spinach
1 Gala apple, chopped
4 small cooked beets, chopped
1/4 cup goat cheese, crumbled
1/4 cup walnuts
Orange Vinaigrette
1/2 cup Orange juice
1 tsp honey
2 tbsp red wine vinegar
1/4 cup olive oil
Pinch of salt
Pinch of pepper
Instructions
Assemble the salad in a decorative plate (I used a flan pan), layer a bed of spinach. Add apple, cooked beets, goat cheese, and walnut. Sprinkle with vinaigrette. Serve.
