This soup is full of flavor because sumac and pumpkin go so well together.
Ingredients
1 medium onion, chopped
2 celery stalks, chopped
1 carrot, chopped
2 cloves of garlic, dice
2 cups cooked pumpkin
150 gr cream or goat cheese
2 cups chicken broth
1 large tablespoon sumac
Salt and pepper
2 tablespoons butter or oil
Instructions
In a large pot over medium heat, melt butter and saute onion and celery for 3 minutes
Add and saute 2 more minutes.
Add garlic and cream cheese and mix well.
Add sumac and mix well.
Add pumpkin and mix well.
Add broth and mix well.
Bring to a boil then cook on low heat for 20 minutes.
Puree soup and serve with a slice of whole grain bread.
