I shop every two weeks lately and bake my frozen fish in foil to keep the fish moist.

Salmon with Maple Syrup |
Ingredients
2 salmon pieces, small frozen pieces
1 tablespoon maple syrup
1 tablespoon Dijon mustard
Salt, pepper and paprika to taste
2 foil pieces, 12"x12"
Instructions
Mix all ingredients except salmon in small bowl. Place salmon in centre of foil and spread Dijon mixture over fish. Wrap salmon loosely in foil, place foil on cookie sheet and bake at 375 for 20 or more minutes for frozen salmon or 15 or more minutes for fresh salmon. To serve, gently remove salmon into plate and pour hot Dijon sauce over fish. Serve immediately.
Note: for 1 lb fresh salmon, double ingredients.
Hint: Bake small potatoes on another cookie sheet.
