Serves 4
This easy to make white soup is a delicious treat that you can make when like me you have some cream that is on its due date.
The almond flour will not dissolve completely so expect some granulation.

Ingredients
1 french shallot
2 cloves garlic
1/2 cup almond flour
1 cup 5% cream
1/2 cup chicken broth
1 large grated carrot
Olive oil
Instructions
Cut onions, shallot, and cloves into small pieces.
Warm oil in a soup pot.
Add onions and shallot and cook on med to med-low for 10 minutes.
Add garlic and cook for 2 minutes.
Clear a space in the middle of the onions and add the almond flour. Cook for 1 or 2 minutes.
Add broth and stir to mix well.
Add carrots and stir.
Add cream and stir.
Cook on med-low 15 minutes.
Serve with cheese toast.
You can garnish with almond slivers or grated nutmeg.
