Apple Fairy Cupcakes

Makes 12-16 cupcakes

Apple Fairy Cupcakes in pan


Ingredients
3/4 cup sunflower oil, or other baking oil
3/4 cup sugar
3 large eggs
1 ½ tsp vanilla
1 cup gluten-free self-raising flour or regular flour
1 tsp baking powder
2 tablespoons natural yogurt or cream
2 large cooking apples, peeled and chopped into small pieces.

Icing sugar or icing for the topping.

Instructions
Preheat oven to 350F.
In a mixer, mix oil and sugar. Mix in eggs and vanilla. Add flour and baking powder and mix. Stir in yogurt and cooking apples.
Divide the mixture between the cupcakes.
Bake for 20 minutes on the middle shelf at 350 F. Tops will be browned.
Cool cupcakes, then dust with icing sugar or decorate with butter icing.
