Apple Cinnamon Baked Oatmeal

Makes 8-10 servings
Quick breakfast or snack.

Ingredients 
4 apples, peeled and chopped
1/2 tsp cinnamon
2 tablespoons butter, cut in chunks

4 cups quick oatmeal
2 tsp baking powder
2 eggs,  whisked
2 1/2 cups milk
1/2 cup maple syrup
1 tsp vanilla

Instructions
Preheat oven to 375F. Preheat large cast iron frying pan 5 minutes or use a 9 x 13 baking pan without preheating. Add apples and cinnamon to bottom of pan and mix. Sprinkle apples with chunks of butter.

Mix oats and baking powder in a large bowl. In a smaller bowl add eggs and whisk. Add milk,  vanilla and maple syrup to eggs.  Mix. Pour egg mixture in oatmeal and stir. Place mixture into a baking pan or large cast iron pan.  Bake on 375 for 25 to 30 minutes. Cut into 8 or 10 portions. Serve warm with whipped cream, yogurt or milk if desired. Refrigerate left overs.

Hints: Instead of apples use frozen berries and serve with nuts and yogurt.
Can replace milk with 1 cup yogurt and 1/2 cup water.
