Goes nicely with a black tea for those who don’t like earl grey.

Ingredients
310 grams flour, approx. 2 to 2 1/2 cups depending on flour
200 grams slightly softened butter, approx. ¾ cup plus 2 tbsp to 1 cup
100 grams castor sugar,approx. ¼ cup plus 2 tbsp to ½ cup
Zest of one citrus fruit and 1 tsp fruit juice
Instructions
Cream together butter and sugar. Mix in zest and juice. Mix in flour until combined and crumbly. Gently press into an 8” x 8” baking pan lined with parchment paper. Score top to outline 21 bricks and prick the centre of each with a fork. Bake at 150 °C (300 F) until the top is ever so slightly browned, approximately 30-35 min. Immediately remove from pan, cut according to scoring, and cool.
Notes: Measurements from Canadian products on hand
Used the following to make the conversions
All purpose flour - 3 tbsp = 30 grams, 16 tbsp per cup
Butter – 1 tbsp = 14 grams
Caster sugar - 1 tsp = 4 grams
