Crustless Spinach Quiche

Makes one quiche

Ingredients
1 cup shredded old cheddar cheese
4 cups fresh spinach

Quiche filling:
1 pkg. 227 or 250 grams cream cheese
¼ cup milk
4 eggs
1 tsp. salt

Topping:
1 tablespoon grated Parmesan cheese
Paprika

Instructions
Preheat oven at 400F. Oil a 8 x 8 pie plate.
Sprinkle grated cheese in the bottom of  the pie plate. Arrange spinach on top of the cheese.

Quiche filling: Beat cream cheese, milk, eggs and salt.
Pour filling over spinach.

Sprinkle top of quiche with Parmesan cheese and paprika.
Bake at 400 F for 20 minutes or until a knife inserted in the center comes out clean.

 No crust = less calories
