Ingredients
1/2 cup granulated sugar
1 envelope (0.25 oz) unflavored gelatin
1 cup boiling water
2 packs (8 oz each) cream cheese, brought to room temperature
1 tsp vanilla
1 cooked pie crust, graham crumb crust or crushed granola bites or crushed Oat Delights cookies
Toppings: melted soft cream caramels and melted chocolate
Instructions
Prepare pie plate or cake pan.
In medium bowl add sugar and gelatin. Add boiling water and stir until gelatin is dissolved, about 4 to 5 minutes. Once completely dissolved, set aside.
In large mixing bowl add cream cheese and vanilla. Beat until cheese is blended.
Slowly add gelatin mixture to mixer. Mix until evenly blended. Refrigerate mixture for 30 to 45 minutes. Mixture will get thick. Stir every 15 minutes. Once mixture is thick pour into prepared pie crust.
Refrigerate for 3 hours or until firm.
Top with melted caramels and chocolate and refrigerate until cooled, about 30 minutes.
