Ingredients
2 tsp olive oil
4 garlic cloves, minced
2 tablespoons butter
3 to 4 cups chicken or mushroom broth, more as needed
¼ tsp salt
½ tsp black pepper
½ lb spaghetti or your favorite pasta
1 to 2 cups strips of cooked chicken or shrimp
1 cup grated Parmesan cheese
¾ cup heavy cream
1 1/2 cup spinach
1/2 cup fresh chopped parsley
Instructions
In medium pot add oil and preheat pot. Add minced garlic and cook about 1 to 2 minutes.
Add butter and stir until melted. Add 3 cups broth. Add pasta, salt and pepper. Bring to a boil and cook pasta until tender. Add more broth if required to keep pasta from sticking to pot. Once pasta is tender, add Parmesan cheese, heavy cream, spinach, warm cooked chicken or shrimp, and parsley. Stir to combine all ingredients.
Serve with garlic bread and salad.
Leftovers keep well in fridge or freezer. Warms well in sauce pan.
