Pam's Chocolate Mousse Gluten Free Cake

Use gluten-free flour or all purpose flour.  Better to make it a day ahead.

Ingredients

Cake ingredients 
1 1/3 cup or 8 oz dark chocolate chips 
1 cup butter, cut in uniform chunks
1 cup granulated sugar  
5 eggs
1 tablespoon vanilla
1/4 tsp salt 
1/4 cup gluten free flour mix 1:1 flour substitution 

Chocolate mousse ingredients 
1 1/3 cup or 8 oz dark chocolate chips 
1 1/3 cup powdered sugar or icing sugar
2 8oz packages light cream cheese, softened
2 tsp vanilla
2 cups heavy whipping cream, cold

Whipped cream ingredients 
3/4 cup heavy whipping cream, cold
2 tablespoons powdered sugar or icing sugar
2 teaspoons vanilla

Grated dark chocolate, for garnish (optional)

Instructions 

Cake instructions 
Preheat oven to 325ºF. Grease a 10-inch springform pan.
In glass bowl add butter cut into chunks and chocolate chips. Place in microwave and cover with paper towel or parchment paper. Microwave at 50 perfect power for 15-20 seconds, stir and repeat until mostly melted.  Add sugar, vanilla and salt. Beat with wooden spoon until combined. Add eggs one at a time, beating until blended. Stir in gluten free flour. Bake in the center of oven for 30 to 35 minutes and until toothpick inserted into centre of cake comes out clean. Cool completely on wire rack before adding chocolate mousse. 

Chocolate mousse instructions
In glass bowl add chocolate chips. Place in microwave and cover with paper towel or parchment paper. Microwave at 50 perfect power for 15-20 seconds, stir and repeat until mostly melted.
In mixing bowl add melted chocolate, sugar, cream cheese and vanilla. Beat until fully combined. Scrape the sides of your bowl as required.
Turn mixer to low speed. Slowly add cream. Scrape the sides of your bowl as required. Increase speed to medium-high and beat for 3 to 4 minutes until light and fluffy.
Spread mousse on top of cooled cake. Refrigerate covered for 6 hours or overnight. 

Before serving add grated chocolate garnish.
Run a small spatula or knife around the sides of the pan until sides come loose. Slowly open springform pan. Serve cold.
