Shepherd's Pie

Serves 4

Shepherd's Pie

Ingredients
2 cups of chopped leftover roast beef, or 1 lb ground beef
Salt and pepper to taste
2 onions diced, optional
2 cups creamed corn
Mashed potatoes

Instructions
Add salt and pepper to the meat. If using,  cook onions and the ground beef. Place meat in the bottom of a baking dish or casserole dish. Cover the meat with the creamed corn and top it all off with the mashed potatoes. Dot the top with butter, if desired.   Bake 350 for 1/2 hour to 1 hour or until heated.

Variations:
Use different meats,  use deer or moose meat to give this dish a different flavor.
Use different vegetables.
Add or a can of gravy to the meat mixture.
Add 1/4-tsp. savory to the meat.
Sprinkle paprika on top of the potatoes.

Tea Biscuit Topping:  Omit the mashed potatoes and replace with tea biscuits.  Cook the meat and vegetables until well done and the mixture is boiling hot.  Place uncooked tea biscuits on top and place in a hot oven, bake for about 15 minutes, until the tea biscuits are baked.

Gil's Note: I find one can of cream corn and any equal portion of frozen corn makes corn less creamy but taste so fresh.
