Makes one cup
1/2 cup extra virgin olive oil
1/2 cup vinegar
1/2 tsp. salt
1/4 tsp. pepper or less
1 tsp. white sugar, optional
Instructions
Place ingredients in container. Shake well and use on your favorite salad. This dressing tastes great over spinach and romaine.
Variation: You may add garlic, fresh or dried herbs to flavor but it is not necessary.
Try different oils and vinegars, for example, sunflower oil makes a light dressing.
Use this dressing with your favorite salad mixture or try: ½ spinach, ½ romaine, sliced carrots cut on a diagonal, fresh mushrooms slices and sliced radish (optional).
