Serves 4 to 6
4 medium ripe tomatoes cut in wedges
2 cucumbers cut in half, thickly sliced
1 small red or white onion
crumbled oregano
Salt and pepper
2 tablespoon olive oil
3/4 cup crumbled feta cheese
20 Kalamata olives
Instructions
In a large serving dish, combine tomatoes, cucumbers and onion.
Sprinkle with oregano, salt and pepper. Drizzle with olive oil and toss. Sprinkle feta over salad. Garnish with olives. Serve immediately.
Greek dressing
Alternate dressing, instead of oregano, salt and pepper and olive oil
1/2 cup olive oil
1/4 cup lemon juice or wine vinegar
1 garlic clove, minced
Pinch of pepper
1/2 tsp. sugar
1/2 tsp. oregano
Combine Greek dressing ingredients and shake in a small jar. Drizzle over salad just before serving.
