Lemon slices or tartar sauce
Place one or two fresh or frozen fish fillets in a microwave dish or plate. Sprinkle a bit of pepper and lemon juice on top. If desired, sprinkle a bit of paprika. Cover with plastic wrap or lid.
Cook in the microwave at high to medium heat for 2 to 4 minutes depending on the thickness of your fillets and if the fillets are frozen. Sole fillets cook in about 2 minutes. A fresh pickerel fillet will cook in about 1 ½ minutes or less in the microwave. Serve with rice, lemon slices or tartar sauce. See the tartar recipe under Sauces.
Note: To test if the fish is done use a fork; fish will flake when cooked.
