Great recipe for company. Serve with whipped cream and maple syrup.
Pancake batter:
3 eggs
3/4 cup flour
3/4 cup milk
1/2 tsp. salt
2 tablespoons butter
Cream, optional
Apple Sauce:
2 tbsp. Butter
1/2 tsp. cinnamon
2 tbsp. brown sugar
Dash of nutmeg
2 tart apples, such as McIntosh, sliced
Instructions
Pancake batter: Preheat oven to 425F. Combine eggs, flour, milk and salt.
Melt 2-tbsp. butter in large cast iron frying pan. Pour in batter. Bake 15 to 20 minutes until golden. Meanwhile, prepare sauce.
Apple sauce:
Place ingredients in saucepan pan, stir. Cook on medium heat until apples have softened.
Pour sauce on top of pancake and fold in half. Serve immediately with cream.
