Makes about 4 dozens bars
3/4 cup margarine
1/3 cup white sugar
1/2 cup cocoa powder
1 1/2 tsp. vanilla
2 eggs
3 cups graham crumbs
1 1/2 cups flaked coconut
3/4 cup chopped walnuts
Filling:
1/3 cup butter
1 (99gr) vanilla instant pudding
3 cups sifted icing sugar
1/3 cup milk
Green food coloring, optional
Topping:
3 tablespoons milk
1 cup mint chocolate chips
Instructions
Base:
Stir margarine, sugar, cocoa, vanilla and eggs until well blended.
Add graham crumbs, coconut and walnuts, mix well.
Press firmly into aluminum foil or parchment paper lined 13x9 inch pan.
Filling:
Cream butter in medium bowl.
Mix pudding powder and icing sugar together. Add to butter with 1/3 cup of milk and beat until smooth. Tint with food coloring, if desired.
Spread filling evenly over base and chill 15 min.
Topping:
Heat 3 tablespoons milk in top of double boiler. Add mint chocolate chips. Stir until melted.
Spread quickly and evenly over top.
Chill at least 2 hours before serving. Lift bar from pan and remove aluminum foil.
Cut into bars. Store in airtight container in refrigerator.
