Cranberry Orange Muffins

Makes: 12 large muffins

Ingredients
2 cups flour
3/4 cup white sugar
1tsp baking powder
1/2 tsp baking soda
1/2 tsp. salt
1 cup cranberries, chop coarsely
1 egg
3/4 cup orange juice
1/4 cup vegetable oil
1 tsp. grated orange rind

Instructions
In a large bowl combine flour, sugar, baking powder, baking soda and salt. Stir in cranberries.
Beat together egg, orange juice, oil and orange rind in separate bowl. Add to dry ingredients all at once, stirring just until moistened. Spoon into greased muffin tins, filling 3/4 full. Sprinkle tops lightly with additional sugar. Bake 400 F for 15 to 20 minutes or until lightly browned and firm to the touch.
