Pina Colada Cheesecake

Makes one 9-inch cake

Ingredients
Crust:
1 1/2-Cup graham crumbs
1/2 cup flaked coconut
3 tablespoons margarine
Filling:
3 oz crushed pineapple, drained
3 pkg. cream cheese, softened
3 eggs 1 cup sour cream
3 tablespoons dark rum
3 tsp. coconut extract
Topping:
19 oz crushed pineapple
1/2 cup sugar
1 tablespoon dark rum
1 cup sugar
1 tablespoon corn starch

Instructions
Crust: Combine ingredients. Press into a nine-inch springform pan. Bake at 350 F for 10 minutes. Cool.

Filling: Beat cream cheese, sugar and eggs. Stir in a bowl pineapple, sour cream, rum and coconut. Add to the cheese. Pour into crust. Bake 50 to 55 min at 350 F. Cool Refrigerate until set. Add topping.

Topping: Mix all ingredients in saucepan. Cook, stirring until thickened and clear. Cool.
