Marinated Wild Meat

Great marinate for cooking moose, deer or elk on the BBQ.

Ingredients

1 bottle beer, 12 oz., amber or to taste
1/4 cup soy sauce
2 tablespoons Dijon mustard
1 tablespoon Worcestershire sauce
1 dash hot pepper sauce, optional
1 teaspoon salt, or according to taste
1 tablespoon grounded pepper
3/4 lb venison steaks, qty 4

Directions
Mix beer, soy sauce, mustard, Worcestershire sauce, hot sauce, salt and pepper in a bowl. Pour marinade into a resealable bag, add steaks and coat with the marinade. Squeeze out excess air and seal the bag. Marinate for up to two days in the fridge.

Remove steaks from marinade and shake off excess and discard remaining marinade.

Cook steaks on a preheated grill until slightly firm and slightly pink in the center. Cook approximately 7 minutes per side or until 140 F in centre is reached. Let meat rest 5 minutes before serving.

  1. I recommend skipping the salt. the soy sauce makes it salty tasting enough.
